Instant Pot Honey~Ginger Beef Short Ribs {with Gangsta Sauce!}

Oh, InstaPot, how I LOVE you.  This is, by far, my new favorite kitchen toy.  Maybe even my favorite gadget, dare I say, ever?!  It’s magic.  Pure magic, I tell you!  What used to take me hours to create now takes me minutes.  Rice in 7 minutes, yes please!  Spaghetti squash in 4… amaaazing.  Ribs in 40… yowza!  This thing has been a game-changer… if you don’t have one, your life is about to get a whole lot more delicious. 

In addition to being able to make short ribs in less than an hour, this recipe will also gift you with Gangsta Sauce.  Yep, G Sauce.  Never had it?  Don’t worry, nor had I until this.  My husband and I sat down to eat- he took one bite of this sauce drizzled all over the meat and rice- and suddenly blurted out,”Gangsta!”  I looked up, humorously perplexed.  “This sauce,” he said, “it’s gangster!”  I’m not gonna lie, I agree… it’s pretty freaking incredible.  I assured him then and there that I would name this recipe “Short Ribs with Gangsta Sauce” once posted. 😉

You’ll have some extra Gangsta Sauce when all is said and done, which I don’t think you’ll mind!  We found any excuse we could to eat more.  Dipped some steamed broccoli in it the next day, then made chicken skewers smothered in Gangsta Glaze that night too.  Can’t get enough.  It’s honey-ginger sauce for the soul.


serves two

INGREDIENTS

1.5 lbs short ribs (approx 4 ribs)

1/2 tsp salt + 1/4 tsp black pepper, to season ribs

2 tbsp olive oil

 

for the sauce…

1/3 cup honey

1/3 cup fresh orange or mandarin juice

1/2 cup coconut aminos (or low-sodium tamari)

1 piece of ginger, couple of inches thick, cut into thirds

1/3 cup diced red onion

2 tbsp toasted sesame oil

8 cloves garlic, smashed and peeled

1-2 tbsp starch, such as potato or tapioca

 

garnishes: crushed red pepper flakes and sesame seeds

needs: an Instant Pot, like THIS magical one ♥

DIRECTIONS

Add all sauce ingredients except starch together in a bowl

(The starch goes in at the very end to thicken it)

Sprinkle ribs with salt and pepper on all sides

Turn Instant Pot to Sauté setting

Add olive oil to coat the bottom of the pot

Brown ribs, alternating sides, until golden- this usually takes approx 7-8 minutes total

Add the sauce to the pot

Place the lid on, then press the Manual setting and set to 40 minutes

Once done, allow steam to chill…

I usually let it do its thing naturally for about 5 minutes, then set the nozzle to vent to finish it off….

Remove the ribs from the sauce

Add starch to a small bowl- stir some of the sauce in to pre-mix it first

2 tbsp makes a thick glaze-type sauce… start with 1 tbsp if you prefer a thinner sauce, then adjust from there

Set the Instant Pot once again to Sauté mode

Whisk the starch into the sauce…

Continue whisking until sauce is to your desired thickness

That’s it… turn the pot off and get ready to gobble down!

Serve over rice (or cauli rice), pour some of that tasty gangtsa sauce over the top to glaze those beauties,

top with crushed red pepper and sesame seeds if wanted, and devour like champ ♥
